Detroit-style pizza is coming to Derby

Derby, we've got plans for you. Dough Dohs makes Detroit-style pizza: square, deep, golden underneath and edged with cheese that's been left in the pan long enough to go properly crispy. Our first kitchen is in Leicester, just down the road, and Derby is one of the places we want to bring it to next. It isn't live yet, so put your name on the Derby DOH List and we'll tell you the moment it is.

What is Detroit-style pizza?

The dough takes 72 hours. We mix it, then leave it to ferment for three days so it bakes up airy and full of flavour instead of dense and bready. In the pan, the cheese pushed up against the steel caramelises into those crispy cheese edges that Detroit-style is known for.

Delivery only. Dark kitchen.

When we land in Derby it will be as a delivery-only dark kitchen. There's no restaurant to visit, just a kitchen built for one thing.
