Detroit-style pizza is coming to Birmingham

Dough Dohs is heading for Birmingham. We started in Leicester with one job: Detroit-style pizza done properly, baked in a rectangular steel pan until the cheese at the edges turns into a dark, crunchy frame. Birmingham is high on our list of next stops, but we'd rather be straight with you than overpromise: we aren't delivering in Birmingham yet. What is Detroit-style pizza?

Every base starts as a 72-hour fermented dough. That long, slow rest gives a light, open crumb in the middle and a bottom that fries crisp in the pan. Cheese goes right to the edges, sauce goes on in stripes, and what comes out is thick, airy and loud when you bite it.

Our Birmingham kitchen will be a dark kitchen: delivery only, with no dining room and no counter. All of the effort goes into the pizza and getting it to your door hot.

What’s on the menu

When Dough Dohs reaches Birmingham, the full line-up comes with it. The Classics run from The Red Stripe to Hot Honey Pepperoni and Smokestack, and the VIP's bring The Rib, Nashville and Honey Brisket.
