Detroit-style pizza is on its way to Nottingham. At Dough Dohs we bake every pizza in a heavy rectangular pan, so you get a thick, fluffy slice with a crunchy base and a border of caramelised cheese. What is Detroit-style pizza?

It all comes down to time and the pan. Our dough ferments for 72 hours before it's stretched into the tin, which is what makes it light. Then the cheese goes all the way to the sides, where it melts down the steel and fries into a crispy cheese edge.

Dough Dohs Nottingham will run as a dark kitchen. That means delivery only: no tables, no takeaway counter, just pizza made to travel well.
